Ingredients as Shown:
- Sushi rice, cooked
- Seaweed
- Avocados, diced
- Cilantro
- Cucumbers, any size
- Tofu or tuna, cooked your favorite way for poke bowls (my favorite is at the bottom)
Instructions:
- Place rice in center of plate, in the shape of a mountain.

2. Slice sides off of cucumber (shown is a cocktail cucumber). Cut the sides into a zigzag pattern to represent lightning (the text says G-d spoke through thunder, but I could not figure out how to depict sound). Do not use the center that has the seeds; it will be too soft. Use that around the rice or just munch on it.


3. Place cucumbers on rice, pressing down so it stands. I had to cut my “lightning” shorter as it kept falling over.

4. Surround the “mountain” with avocadoes and cilantro and cucumber cuttings, to represent greenery (plus it’s tasty).

5. Top “mountain” with nori, to represent “smoke” (yes, the photo turned out fuzzy).

6. Add the tofu pieces to represent people surrounding the mountain!

My favorite poke bowl tofu (I got from this youtube video, which has the entire recipe, sauces, etc):
Ingredients:
- 1 block of Extra firm tofu (in this case cut into rectangles to make people)
- 3 Tbsp soy sauce
- 2 Tbsp sesame seed oil
- 1 Tbsp of agave syrup or brown sugar
- 1 Tbsp of gochujang (optional)
Add all ingredients to a non-stick wok/pan and cook on medium to medium-high heat until all the liquid is absorbed. Stir frequently!
