Ingredients as shown:
- Boiled waxy potatoes (you can use apples instead)
- Mayonnaise (or substitute nut butter to go with the apples)
- Cilantro (or parsley or mint sprig or green onion)
Tools:
- Sharp knife to cut potatoes (can be completed ahead of time)
- Dull knife or spoon to spread “mortar”
Instructions:
- TO PREPARE: Cut potato into long “bricks.” Try to make the height relatively even. For younger children especially, you will want to do this ahead of time to avoid too much frustration. A few short pieces for the ends to have offset layers will be fine. Be realistic about how much kids will eat; I hate to waste! Turn the cut off parts into potato salad.
- Taking one potato piece at a time, spread a bit of mayonnaise on the bottom and right side (opposite if the maker is a leftie). Repeat with 2 or 3 more pieces.



3. Add second layer.

4. Continue until you have the wall you want. Unless the “bricks” are very wide, it will be no more than 4 layers, and probably 3 before it collapses (I managed 5).


5. What motivated us? Fear, unfortunately. Take cilantro. Snip to desired size, remove leaves.


6. Curl the stem around a finger, then you have your curled whip.


When you are done, chop up the cilantro, and have a delicious potato salad!
